Fruit Pancakes - December 26th

Circulon Premier Double-Burner Nonstick Hard-Anodized Griddle with Pancake MoldsFor some reason pancakes made from scratch simply taste better than the mix… but I’m not above using the mix lol… it’s just that I saw this recipe that is supposedly easy enough for kids to help out with. I’m thinking that at some point, they will be old enough to cook us breakfast with no help from us ;) And I have been wanting a good cast iron griddle like that one for ages. Simply didn’t know how expensive they were. :(

2 cups all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
2 eggs
2 cups milk
3 tbsp. vegetable oil
Butter
About 1 cup of fruit, such as blueberries, raspberries,
Sliced strawberries, apples, peaches or bananas
Maple syrup

This is Christmas week afterall… you still need some pampering and breakfast is a good place to start! And if it is sitting out on a lanai in Florida… even better!! Yes, that is exactly where I am this week!
