Kids In The Kitchen - Good Cookie Recipe

The Cookie Jar : Cookies From Around the WorldMy daughter has a Girl Scout Thinking Day event this afternoon. It was really supposed to be a few weeks ago, but hers was canceled due to snow. They are using an Australian theme and each girl has to bring cookies made from an Australian recipe. We chose Anzac Biscuits. They were easy to make and pretty tasty, too!

Anzac Biscuits

1 cup rolled oats

3/4 cup of shre

Shredded coconut

3/4 cup of flour

1 cup sugar

1/2 cup margarine or butter

1 Tablespoon of honey or light colored corn syrup

3 Tablespoons of boiling water

1 1/2 teaspoon of baking soda

Parchment paper or heavy duty aluminum foil

Measure oats, coconut, flour and sugar in a bowl and mix gently.

Melt margarine and honey/corn syrup in a small pan over medium heat (we did this in the microwave instead).

Dissolve baking soda with 3 TBS of boiling water. Stir.

Add melted margarine mixture to baking soda mixture.

Pour margarine mixture over the dry ingredients. Mix well.

Heat oven to 300 degrees. Cover two baking sheets with parchment or foil.

Drop cookie mixture by teaspoonfuls onto tray about 2 inches apart (these are thin and spread)

Bake 10-12 minutes until crisp but not burned.

Cool and store.
